Roast Turkey with Herbed Gravy

  • 1 Whole Turkey (12-14 pounds)
  • 2 tbsp Olive oil
  • 1 tbsp fresh Rosemary, minced
  • 1 tbsp fresh Thyme, minced
  • 1 tbsp fresh Sage, minced
  • Salt and pepper to taste


  1. Preheat your oven to 325°F (165°C).
  2. In a small bowl, mix the minced rosemary, thyme, sage, olive oil, salt, and pepper to create a herb-infused oil.
  3. Place the turkey on a roasting rack in a large roasting pan.
  4. Brush the herb-infused oil over the turkey, ensuring even coverage.
  5. Roast the turkey in the preheated oven, following the cooking instructions based on its weight (usually 15-20 minutes per pound).
  6. Use a meat thermometer to check that the turkey’s internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
  7. Let the turkey rest for about 20 minutes before carving.
