Ingredients

  • 1/2 cup canned Pumpkin puree
  • 2 tbsp Chia seeds
  • 1/2 cup Almond milk, unsweetened (or any milk of your choice)
  • 1 tbsp pure Maple syrup or Honey
  • 1/2 tsp Cinnamon, ground
  • 1/4 tsp Nutmeg, ground
  • 1/4 tsp Vanilla extract
  • Chopped Pecans or Walnuts (optional, for garnish)

Instructions

  • In a bowl, combine the pumpkin puree, chia seeds, almond milk, maple syrup or honey, ground cinnamon, ground nutmeg, and vanilla extract.
  • Mix well, cover, and refrigerate for at least 4 hours or overnight, allowing the chia seeds to absorb the liquid and create a pudding-like consistency.
  • Before serving, stir the pudding and garnish with chopped pecans or walnuts if desired.
